CLASSIC
MEATBALLS
Ingredients
1 lb ground beef or ground veal ( You can substitute up to 50% ground pork if using beef)
1 egg
1/4 cup milk
1/4 cup breadcrumbs
1/2 teaspoon salt
1 teaspoon oregano
1 tablespoon fresh parsley
1/2 teaspoon garlic powder
1/2 teaspoon fresh ground pepper
1/4 cup grated parmesan cheese
( We make up to 6 batches at once which I freeze and used within 3 months )
Instructions
1) Preheat oven to 400F
2) Mix together Milk and Bread crumbs until milk is absorbed
3) In a large bowl, mix in one pound of meat, 1 egg, bread crumb and milk mixture, 1/2 teaspoon of salt, 1 teaspoon of oregano, 1 tablespoon of fresh parsely, 1/2 teaspoon of garlic powder, 1/2 teaspoon of fresh ground pepper, 1/4 cup of grated parmesan cheese.
4) Roll into balls approximately 1 1/2 inches and place on a baking sheet
5) Bake 15 minutes turning half way as not to brown bottoms ( The goal here is to form a 'crust' on the meatball so they do not fall apart in the sauce)
6) Either transfer to sauce or freeze for future use ( Note that the meatballs are only partially cooked at this point )
7) Place partially cooked (or previously frozen) meatballs into a sauce pan along with a jar of Don Carbone sauce ( ensure meatballs are covered ) and simmer for 1-1 1/2 hours
8) Pour sauce and meatballs over your favourite pasta and enjoy!
Note: Like any recipe, you should adjust it to your taste. Add and subtract seasoning amounts to your liking.
